Rice Mixed with Tamarind Paste

Ingredients

Young Tamarind                        8          pods               

Shallot                          4          bulbs

Garlic                            2          cloves

Thai Hot Pepper            12        

Grilled Shrimp Paste      2          teaspoon(s)

Dried Shrimp Soaked in Water    2          tablespoon(s)

Rice Bran Oil for Stir Fry                       

Minced Pork                 50         grams

Palm Sugar                   1          tablespoon(s)

Thai Jasmine Rice         200       grams

 

Method

1. Scrape the outer pulp of young tamarind with knife edge or spoon tip, then slice it into small pieces to make it easier to pound.

2. Pound together young tamarind, shallot, garlic, Thai hot pepper, grilled shrimp paste and dried shrimp soaked in water just enough to blend well, fineness per desired.

3. Stir fry the pounded ingredients in oil until fragrant. Add minced pork and keep stir frying until the pork is cooked.

4. Season with palm sugar, add Thai jasmine rice and cook until everything goes well.

5. Serve with fried pork and salted egg.

 

酸角辣椒酱拌饭

成分

青酸角                          8          个                    

红葱                              4          头

大蒜                              2          瓣

小米椒                          12         颗

烧虾酱                          2          茶匙

海米浸在水中                 2          汤匙

为翻炒的米糠油                                    

猪肉末                          50         克

椰糖                              1          汤匙

茉莉香米                       200       克

 

方法

1.用刀或勺子的边缘刮掉青酸角的外皮,然后切成小块,以便轻松捣碎。

2.捣碎青酸角、红葱、大蒜、小米椒、烧虾酱和海米浸在水中,直至均匀。

3.将捣碎的材料倒入油中,炒至够香,加入猪肉末,继续炒直至猪肉煮熟。

4.用椰糖来调味,然后再加入茉莉香米饭,翻炒所有的材料至均匀。

5.配上烤猪肉和咸蛋一起食用。
